Black King Oyster Mushroom Stir-Fry with Garlic & Ginger

Black King oysters have a hearty, slightly chewy texture that soaks up flavors beautifully. This stir-fry brings out their umami richness with a glossy, savory garlic-ginger sauce.

Ingredients:

• 2 large black king oyster mushrooms, sliced into bite-sized strips

• 1 tbsp vegetable oil

• 2 cloves garlic, minced

• 1-inch piece ginger, grated

• 2 tbsp soy sauce

• 1 tbsp oyster sauce (or hoisin for a vegan option)

• 1 tsp sesame oil

• ½ tsp red pepper flakes (optional)

• 2 scallions, sliced

• 1 tsp sesame seeds (for garnish)

• Steamed rice or noodles, for serving

Instructions:

1. Heat vegetable oil in a large pan or wok over medium-high heat.

2. Add mushrooms and cook for 5-6 minutes until golden and slightly crispy.

3. Stir in garlic and ginger, cooking for another 30 seconds.

4. Add soy sauce, oyster sauce, sesame oil, and red pepper flakes. Toss well to coat.

5. Stir in scallions, then remove from heat.

6. Sprinkle with sesame seeds and serve over rice or noodles.
