Tuscan-Style Italian Oyster & White Bean Stew

Italian oysters have a robust, meaty texture that holds up well in a hearty, rustic stew.

Ingredients:

• 1 cup Italian oyster mushrooms, torn into pieces

• 1 tbsp olive oil

• 1 small onion, diced

• 2 cloves garlic, minced

• 1 can (15 oz) white beans, drained and rinsed

• 1 can (14 oz) fire-roasted tomatoes

• 1 cup vegetable broth

• 1 tsp dried oregano

• ½ tsp red pepper flakes

• Salt & pepper to taste

• 1 handful fresh spinach or kale

• Grated Parmesan & crusty bread for serving

Instructions:

1. Heat olive oil in a pot over medium heat. Sauté onions and garlic until soft.

2. Add mushrooms and cook for 5 minutes until lightly browned.

3. Stir in white beans, tomatoes, broth, oregano, and red pepper flakes. Simmer for 15 minutes.

4. Add spinach/kale and stir until wilted. Season with salt and pepper.

5. Serve with grated Parmesan and crusty bread.
