Crispy Lion’s Mane “Crab Cakes”

Lion’s mane has a naturally flaky texture that makes it a fantastic seafood substitute in this easy, crispy crab cake recipe.

Ingredients:

• 1 cup lion’s mane mushrooms, shredded

• ½ cup panko breadcrumbs

• 1 egg (or flax egg for vegan option)

• 1 tbsp mayo (or vegan mayo)

• 1 tsp Dijon mustard

• ½ tsp Old Bay seasoning

• ½ tsp garlic powder

• 1 tbsp chopped parsley

• 1 tbsp olive oil (for frying)

• Lemon wedges for serving

Instructions:

1. In a bowl, mix shredded lion’s mane, breadcrumbs, egg, mayo, mustard, Old Bay, garlic powder, and parsley.

2. Form into small patties.

3. Heat olive oil in a pan over medium heat. Fry patties for 3 minutes per side until golden brown.

4. Serve with lemon wedges and your favorite dipping sauce.
