Garlicky Blue Oyster Crostini
Blue oysters develop a deep, earthy umami flavor when sautéed, making them perfect for a simple yet elegant appetizer.
Ingredients:
• 1 cup blue oyster mushrooms, torn into bite-sized pieces
• 1 tbsp olive oil
• 1 tbsp butter
• 2 cloves garlic, minced
• ½ tsp sea salt
• ¼ tsp black pepper
• 1 tsp fresh thyme leaves
• ½ tsp lemon zest
• 6 slices of toasted baguette
• ¼ cup ricotta or goat cheese (optional)
Instructions:
1. Heat olive oil and butter in a pan over medium heat.
2. Add garlic and sauté for 30 seconds until fragrant.
3. Add mushrooms, salt, and pepper. Sauté for 5-7 minutes until golden and slightly crisp.
4. Stir in thyme and lemon zest, then remove from heat.
5. Spread ricotta on toasted baguette slices (if using), then top with mushrooms. Serve warm.
