Creamy Snow Oyster & Herb Risotto

Snow oysters have a delicate, nutty flavor that pairs beautifully with the creamy texture of risotto.

Ingredients:

• 1 cup snow oyster mushrooms, roughly chopped

• 1 tbsp olive oil

• 1 tbsp butter

• ½ cup arborio rice

• ½ cup dry white wine

• 3 cups vegetable or chicken broth, warmed

• ½ cup grated Parmesan cheese

• 1 tbsp chopped parsley

• ½ tsp salt

• ¼ tsp black pepper

Instructions:

1. Heat olive oil in a pan, add mushrooms, and sauté until golden (about 5 minutes). Remove and set aside.

2. In the same pan, melt butter and add arborio rice. Stir for 1-2 minutes.

3. Pour in white wine and stir until mostly absorbed.

4. Gradually add broth, ½ cup at a time, stirring frequently. Continue until the rice is creamy and tender (about 18-20 minutes).

5. Stir in mushrooms, Parmesan, parsley, salt, and pepper. Serve warm.
